Few foods are more closely associated with South Africa as boerewors. Whether sizzling over coals at a weekend braai or tucked into a boerie roll at a rugby match, this coiled sausage is so much more than a national favourite. In many ways it represents a taste of the country’s layered culinary history. And that’s why every South African loves it …
WHAT MAKES BOEREWORS
First, did you know it has a legal identity. South African regulations require raw boerewors to contain the five Ms:
- Minimum 90% meat.
- Maximum fat content of 30%.
- Must contain coarsely grouns beef, pork, sheep or goat meat (or a blend) in an edible casing.
- Mechanically recovered meats and added colourants are prohibited.
- May also include spices, herbs, vinegar, salt, cereal or starch, certain permitted additives and water.
WHAT MAKES THAT UNIQUE BOEREWORS FLAVOUR?
Then there is the distinct flavour of boerewors. When you eat it, you know you’re not eating just any other sausage. Traditional recipes typically feature coarsely ground meat, seasoned with toasted coriander seeds, black pepper, cloves and nutmeg. Allspice is another popular addition, while vinegar provides a distinctive tang.
Recipes vary between butchers and regions, but coriander seeds add the unmistakable signature. Unlike finely emulsified frankfurters, for example, boerewors has a coarse, meaty bite. It is stuffed into a long casing and sold in a continuous coil, ready to be unfurled on the braai.
COMPLEX ANCESTRY OF BOEREWORS
Its ancestry is international, too. Dutch settlers brought European sausage-making traditions to the Cape. But its distinctive seasoning reflects the Cape’s place in global spice networks. In the time of the Dutch East India company, ingredients and cooking traditions migrated around the world. And people brought to the Cape from places including Indonesia, Madagascar and Mozambique also shaped Cape food culture. It’s history is far more culturally complex than you might imagine.
And which overseas sausage comes closest to boerewors? Experts argue Britain’s Cumberland sausage is probably the closes. It shares boerewors’ coarse texture and traditional coiled presentation, and can contain pepper, nutmeg and herbs. However, it is pork-based and lacks the same coriander seed-led flavour profile. Historically, Dutch ‘verse worst’ is arguably the closer relative. Ultimately, boerewors is not defined by one secret spice or recipe. It is the combination of a legally protected composition and rich South African heritage.
