If you’re looking for a comforting, flavour-packed meal without loading up on carbohydrates, the viral dirty cabbage recipe might be worth adding to your dinner menu.
The dish has attracted attention on social media, with home cooks sharing versions that combine cabbage, minced beef and bold seasonings in one pan.
The low-carb version puts cabbage at the centre of the meal, pairing it with savoury meat and spices for a hearty dish that can be enjoyed on its own.
It is also a practical option for anyone looking to prepare a filling meal without pasta, rice or potatoes.
Ingredients
One medium head of green cabbage
500g minced beef
250g smoked sausage, sliced
One medium onion, chopped
One green pepper, chopped
Three garlic cloves, minced
Two tablespoons tomato paste
One cup beef stock
One tablespoon Worcestershire sauce
One teaspoon smoked paprika
One to two teaspoons Cajun seasoning
Salt and black pepper to taste
Chilli flakes or fresh chilli, optional
One tablespoon cooking oil, if needed
Prepare the cabbage. Remove the outer leaves of the cabbage, wash it thoroughly and cut it into bite-sized pieces.
Chop the onion and green pepper, mince the garlic and slice the sausage.
Brown the minced beef. Heat a large frying pan or pot over medium-high heat. Add the minced beef and cook until browned, breaking it up with a wooden spoon. Allow the meat to develop a little colour for a richer flavour.
Add the sliced smoked sausage and cook for a few minutes until lightly browned. Stir in the chopped onion and green pepper and cook until softened. Add the garlic and cook for another minute.
Season the mixture. Stir in the tomato paste, smoked paprika and Cajun seasoning. Add the Worcestershire sauce and black pepper, mixing everything until the meat and vegetables are coated in the seasoning.
Add the chopped cabbage in batches if necessary, stirring it into the meat mixture. Pour in the beef stock and mix well so the cabbage absorbs the flavours.
Reduce the heat, cover the pot and cook for about 12 to 20 minutes, stirring occasionally.
The cabbage should soften while retaining a little texture.
Add a splash of water or stock if the mixture becomes too dry.
Taste the dish and adjust the salt, pepper and chilli according to your preference. Serve hot as a standalone meal or alongside a low-carbohydrate side dish. – IOL
