MEXICO CITY – For those seeking the perfect balance of tender meat and bold flavors, sirloin tacos have become a staple of the Mexico City street food scene. While many offer a standard “trompo” (marinated spit-roast) experience, finding the spots that master the technique of melting the fat and maintaining the meat’s juicy texture is an art form.
In this guide, we explore some of the best locations to enjoy authentic sirloin tacos in the capital, ranging from legendary street stalls to established local favorites.
The Flavor Profile of Sirloin Tacos
What makes sirloin tacos a standout choice is the cut of meat itself. Unlike the leaner cuts often found in standard tacos, sirloin provides a richer, more savory bite. When prepared correctly—marinated in a blend of chilies, spices, and citrus, then slow-roasted—it delivers a deep flavor that stands up beautifully against traditional accompaniments like cilantro, onions, and spicy salsa.
Where to Find the Best Tacos in CDMX
While the “best” spot is often a matter of personal preference, several neighborhoods in Mexico City have become hubs for high-quality sirloin tacos.
- The Traditional Street Stalls: In areas like Colonia Roma and Condesa, you can find “tacos de trompo” stands that have been perfecting their recipes for decades. Look for the long lines of locals; they are usually a sign of a well-seasoned marinade and high-quality meat.
- The Neighborhood Favorites: Many local “taquerías” offer sirloin tacos as a premium option. These spots often provide a more comfortable seating arrangement while maintaining the authentic, smoky flavor of wood-fired cooking.
- Specialty Tacos: Keep an eye out for “Tacos de Sirloin al Pastor,” a unique fusion where the rich sirloin is prepared in the traditional vertical spit style, offering a unique texture and depth of flavor.
What to Order
When visiting these spots, the standard order is usually the “taco de sirloin” served with a side of “queso fresco” (fresh cheese) and a variety of salsas. For the full experience, try the “taco de trompo” style, where the meat is thinly sliced from the rotating spit directly onto a small corn tortilla.
