The Food Safety and Standards Authority of India (FSSAI) has issued a notice to AB Hotels Ltd, operator of the Radisson Blu Hotel in New Delhi, over multiple food safety and hygiene violations, directing it to take immediate corrective measures and warning of possible licence suspension.
"The FBO (food business operator) has been directed to take immediate corrective measures and submit a detailed action taken report with supporting documentary and photographic evidence wherever applicable," the FSSAI said in a social media post.
The food regulator warned that failure to comply may invite further action, including suspension of the FSSAI licence.
According to the FSSAI, inspections revealed poor maintenance of premises and equipment, including rusted machinery, freezer leakage, and deficiencies in refrigeration, temperature monitoring, ventilation, flooring and lighting.
The authority also flagged inadequate cleaning and sanitisation, stagnant water, drainage issues and problems with food waste management. Cockroach and fly activity were observed, pointing to deficiencies in pest control.
Food procurement and receiving checks were also found inadequate. The regulator reported the receipt of fungal-affected and deteriorated fruits and vegetables, along with gaps in approved-vendor records and traceability.
The FSSAI further said that cooking oil suitability checks were not carried out as required. Oils with Total Polar Compound (TPC) values of 31 and 24.4 were found in use in the NYC kitchen.
Other violations included improper segregation of raw and cooked foods, vegetarian and non-vegetarian items, allergenic and non-allergenic foods, and food and non-food items.
The regulator also found food handlers working without gloves and hairnets, wearing jewellery and having long nails.
In addition, the FSSAI licences were not prominently displayed, while deficiencies were recorded in compliance with licence conditions and the coverage of food business activities.
